While living in Spain, I discovered a dessert that is a must-have. When the craving for something sweet rolls in, healthy habits are still in play. Our philosophy is never to starve the craving, but replace the bad with the good. 

Sometimes the change of diet helps us find satisfaction in new foods.

There is nothing quite like a warm, thick berry compote to make a morning feel grounded and comforting. Combining that memory of Spain with a quick, nutrient-dense chia seed jam is the perfect way to bring that filling, nourishing vibe into your kitchen in under ten minutes.

The beauty of adding chia seeds is that they absorb the natural juices and plump up, creating a thick texture without needing a ton of added sugar.

10-Minute Warm Blueberry Chia Compote

The Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1 tablespoon chia seeds
  • 1 tablespoon water or fresh lemon juice (lemon adds a lovely, bright pop)
  • A splash of honey or a syrup (optional, depending on how sweet your berries are)
  • A pinch of cinnamon (optional, for an extra layer of warmth)
  • Or add some dark chocolate slivers in it for full richness

The Method

1. Heat the berries:3-4 minutes.

Place the blueberries and water (or lemon juice) in a small saucepan over medium heat. As they heat up, the berries will start to soften and release their deep, vibrant juices.

2. Mash to your preference:1 minute.

Use the back of a fork or a wooden spoon to burst and mash the berries right in the pan gently. You can leave some whole for texture or smash them completely for a smoother sauce.

3. Stir in the magic:1-2 minutes.

Turn the heat down to low while stirring in the chia and a pinch of cinnamon, chocolate, or sweetener, if using it. Let the mixture simmer softly for about two minutes, stirring occasionally so it doesn’t s tick.

4. Remove and let it thicken:3 minutes, off heat.

Take the pan completely off the burner. Let it sit quietly for a few minutes. As it cools slightly, the chia seeds will work their magic, absorbing the juices and thickening everything into a rich, luscious compote.

How to enjoy it warm: Spoon it right over a bowl of oatmeal, a scoop of plain yogurt, or even a warm slice of toasted sourdough. It’s incredibly filling, comforting, and brings a beautiful bit of intentional color to your day.
