Pan-Seared Salmon Recipe

It’s fast, healthy, and yummy!

Ingredients

  • 2 salmon fillets (6 oz each, skin-on, patted thoroughly dry)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, smashed
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill and flat-leaf parsley, chopped into fine pieces
  • We recommend using Sea salt in place of regular salt.
  • Pop in some fresh ground pepper until it tastes just right.

Instructions

  1. Dry the Skin: Use a paper towel to remove all moisture from the salmon skin. We recommend seasoning both sides generously with sea salt and cracked black pepper.
  2. Sear undisturbed: Pour olive oil in a stainless steel or cast-iron skillet and heat over medium-high heat until it shimmers. Next, place each fillet in the pan, keeping the skin side on the bottom. Using a spatula, press each piece down gently for about 5 minutes, until the skin is golden and crisp.
  3. Flip and Baste: Gently flip the fillets. Drop the butter, smashed garlic, and fresh herbs into the pan. As the butter foams, tilt the skillet slightly and spoon the herb butter over the fillets for another 2 to 3 minutes, until cooked to your liking. For the finishing touch, add just a squeeze of lemon juice. Fresh is best.
  4. Serve: Plate with roasted asparagus or a light arugula salad.
