I love Mexican food.  Huevos Rancheros, I’m in!  Nachos with all the fixings? I’ll definitely be there to grab my share.  The more authentic the flavor, the faster I will run to it!  There’s something about that flavor that gives us a thirst for some excitement and adventure.  The spicier the flavor, the more addicted we become, as we pound down beans, tortillas, and the Zest – Guac!

Here is an all-time favorite amongst anyone who loves guacamole.  No, this isn’t the average guac that we don’t taste the flavor.  This adds an additional fluffiness to the ripened sweetness of the green goddess, filled with nutrients.  It’s fast, simple, and healthy.  Each bite will satisfy your quest for adventure!

A few of the simple elements that bring warmth, depth, and intention into our kitchen.

  • Organic Ripe Avocados
  • Extra Virgin Olive Oil
  • Cast Iron or Cooking Pot
  • Mineral Sea Salt

Grab your recipe journal or a piece of paper. A small note tablet. A sticky note. Anything to write it on, embed it in your memory.

Ingredients

6 ripe Avocados (medium – not too firm, not too soft)

1 tablespoon of sala – your favorite

1/2 teaspoon Mayonnaise

Lemon juice (one squeeze to keep the green from turning color)

Salt and pepper to taste

No salsa? Make your own.

Directions

Smash the avocados with a fork, leaving the small chunks there and place in a bowl. Add all of the other ingredients, blending with the fork.  Fluff the green pile of flavor into a blossoming zest fit for a Goddess.  Add salt and pepper to taste.

Do not stir like a cake batter, or the air will be reduced for full fluff!

Special Note: We love to prepare our salsa and guacamole in wooden bowls using wooden spoons. There is a complimentary flavoring that seems to enhance it more than we think it could. And it does. Try it and let us know what you think.
